One of the first signs of spring is the bright red leaves of rhubarb poking up in our garden!

Rhubarb Orange Muffins

Topping:

1/4 Cup brown sugar

1 Tbsp. orange zest

1/2 tsp. cinnamon

Batter

2 Cups flour

1/2 cup sugar

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 egg

1/4 tsp. pure vanilla

1/3 cup melted butter

1 cup orange juice

1 1/2 cups chopped rhubarb

 

Combine topping ingredients and set aside. Blend dry ingredients in large bowl and set aside.Mix together egg, vanilla, juice and butter  and add to dry mixture until just combined.  Spread half in muffin tins and top with rhubarb. Add remaining batter  on top and sprinkle with topping. Bake at 375o for about 12 – 15 minutes or until toothpick comes out clean. Yummmmmm!
